The world of Minecraft has a 3D coordinate system where Y represents your vertical height. You can enable live coordinates from the settings to know your exact Y levels.

The cheese cave strategy is great because you don’t have to mindlessly mine deep in a pit, you can get a decent amount of exposed diamond ores fairly quick, and the hostile mobs in the dark areas will keep you entertained.
