When you are looking for diamonds, make sure that you are going deeper into the ground. Diamonds spawn mostly at the range of Y level -53 to -58. The world of Minecraft has a 3D coordinate system where Y represents your vertical height. You can enable live coordinates from the settings to know your exact Y levels.
When you reach the specific level, get your best pickaxes out and start mining as much as you can. You can try strip mining to cover a good amount of area or go berserk and use a lot of TNTs. Note that you can find diamonds in deeper levels as well, but the best area to look for is -53Y to -58Y.

Cheese caves are great because you can easily set up a base, light up the surrounding area, and then explore the vast region for diamonds. You will also come across other items such as redstone, lapis, gold, iron, and copper. After The Copper Age update, this orange metal has become quite useful.
The cheese cave strategy is great because you don’t have to mindlessly mine deep in a pit, you can get a decent amount of exposed diamond ores fairly quick, and the hostile mobs in the dark areas will keep you entertained.
The presence of hostile mobs makes it even more rewarding because you are not only getting diamonds and other metals, but also collecting a lot of XP in the process. After the Mounts of Mayhem update releases, you can carry the spear weapon to try it out as well.
